Appetizers & Sides
Ingredients:
2 blocks of Fat Free Cream Cheese
small bottle of hot sauce
1 pkg. shredded cheddar cheese
2 cans shredded chicken (drained)
1 block jalapeno cheese (thinly sliced)
1 big bottle Fat Free Ranch
Directions:
Mix all ingredients together and bake at 375 degrees for 25-30 minutes
Baked Corn
Ingredients:
2 Tbl Sugar
1 Can cream corn
1 Can Whole corn-drained
1 pint Sour cream
1 Box Jiffy corn bread
1 Stick melted butter
2 Eggs
Baked Corn
Ingredients:
2 Tbl Sugar
1 Can cream corn
1 Can Whole corn-drained
1 pint Sour cream
1 Box Jiffy corn bread
1 Stick melted butter
2 Eggs
Directions:
Mix all ingredients. Place in a 2 qt. casserole dish. Bake at 350 degrees for 80-90 minutes uncovered.
Great Picnic Beans
In Crock pot:
2 Cans Pork & beans
2 Cans Kidney beans-drained
2 Cans Buttered beans-drained
2 Cans Green beans-drained
2 6oz tomato paste
2 Cups brown sugar
1 lb bacon-browned and broken into pieces
*Simmer on low

Dinners
Creamy Broccoli Soup

2 Cups of Milk
8 oz Cream cheese, cubed
3/4 lb Velveeta cheese, cubed
10 oz chopped fine broccoli, cooked & drained (food processor or blender)

In a 2 qt sauce pan ( 5 qt if doubled) cook onion in margarine until tender. Be careful not to burn. With heat on medium, add milk, cream cheese and stir until melted. Add remaining ingredients; heat thoroughly, stirring occasionally.

1/2 Lb jumbo shells
1Tbs oil
1 LB ground beef or turkey
2 slices broken bread
1/4 cup milk- poured over bread
3/4 cup Velveeta cheese chunk
1 jar (15 0z) Ragu or any brand sauce
Directions:
Cook shells in water and oil according to package directions, drain. Mix rest of ingredients in bowl and fill shells. Put in greased baking dish. Pour Ragu sauce over shells. Cover with tin foil. Bake at 350 degrees for 40 minutes. If made the day before, don't put sauce on until ready to go into oven.
Chicken Pot Pie
Ingredients:
Whole chicken
5-6 large potatoes peeled and cut up
dough:
2 cups flour
2 eggs
dash salt
1 tsp shortening
enough water to make it roll (1/3 cup)
saffron
pepper
Directions:
Cook chicken in 5 quart kettle with 3/4 full water for 1 hour. Take chicken out to cool. Place potatoes in boiling water, while cooking make dough using remaining ingredients. Roll out dough and cut into squares. Place dough squares into kettle a few at a time stirring occasionally. Cut up chicken and place into kettle. Add saffron, salt & pepper. Simmer & serve.
Ingredients:
1/2 cup chopped onion
1 Lb ground beef or turkey
1/2 Lb-3/4 Lb American cheese cubed
8 0z cooked elbow macaroni
1 Tbs mustard
1/2 pkg. frozen corn
1/2 tsp pepper
1 can tomato soup
Directions:
Place ground beef/turkey in skillet and brown. When it loses its reddish color, add onion and cook. When brown, set aside to cool. Spray casserole dish with cooking spray. Mix cheese, macaroni, mustard, corn, salt, pepper and tomato soup in casserole dish. Stir in mixture of meat and onions. Bake at 350 for 1 hour in the large casserole dish (covered).
Salisbury Steaks
Ingredients:
1 can condensed cream of mushroom soup
1- 1 1/2 Lb ground beef or turkey
1/2 cup dry bread crumbs
1 egg, slightly beaten
1/4 cup finely chopped onion
1/3 cup water
Directions:
Combine 1/4 cup soup with ground beef/turkey, bread crumbs, egg, onion and pepper. Mix thoroughly. Shape into 6 patties and place in a shallow baking dish. Bake at 350 for 30 minutes. Spoon of excess fat. Combine remaining soup with water and pour over patties. Bake 10 minutes longer. Can also fry in pan instead of baking.

Pumpkin Roll
3 eggs
2/3 cup pumpkin
1 tsp baking soda
1 cup sugar
3/4 cup flour
2 tsp cinnamon
Filling:
8 oz cream cheese softened
1 stick of butter
1 cup 10x sugar
1/2 tsp vanilla
Directions:
Mix the cake ingredients. Put wax paper in Jelly Roll pan or Cookie sheet. Bake for 15 minutes at 350 degrees. Get out of the oven, lift up wax paper with cake and flip over onto a towel that has been sprinkled with 10x sugar. Roll up the towel with cake and let cool. Mix softened items for icing. Unroll cake and spread icing, roll back up. Sprinkle top with 10x
Ingredients:
5-6 large Macintosh apples
1/2 cup sugar
1 Tbs flour
1/2 tsp cinnamon
1/2 dash salt & nutmeg
Crumbs:
1/2 cup sugar
3/4 cup flour
1/3 cup butter (stick)
Directions:
peel and slice apples. mix sugar, flour, cinnamon, salt and nutmeg with apple slices. Put in pie shell.
Fork crumb ingredients in a bowl until balls together, sprinkle on pie.
Bake at 350 for 50 minutes- wrap crust, remove last 10 minutes.

Ingredients:

Love the Salisbury steak recipe, I have made it in the past but I never knew you could bake it. When I made it, It was done in a frying pan and the patties would fall apart.

ReplyDeleteThe picnic beans are like what I grew up with that came out of a can! More beans though. We had green beans with "shelly beans" (which are pinto beans - which I only discovered lately) and Mom added bacon and simmered them a long time. Makes those green beans delicious!

ReplyDeleteThanks for sharing such a variety of yummy sounding recipes. I am 59, and my mom just turned 90 thus week. My grinding mother was born in 1896 and died at 100 and she gave me a bunch of her recipes, but I haven't tried to make any of them. They were mostly bread and desserts, but were absolutely scrumptious. I especially want to try your baked corn and chicken pie. I nay send you my granny's recipes for rolls, apple dumplings, persimmon pudding, chess tarts and apple fritters. They all melt in your mouth, but her recipes say a pinch of this and that and I'm a horrible cook. Granny and my mom could make anything and they sewed like angels, but never taught me either skill. I only have her recipes because once when my mom was out of town and I stayed with my grandmother, she sat on a stool in the kitchen and I made the recipes I listed above and she showed new what a pinch was to her, but nothing came out the way her recipes did exactly.
