Are you looking for the best broccoli cheese soup? Congratulations, you have found it! This soup is hands down the best broccoli cheese soup we have ever had-- my mom has been making this soup for as long as I can remember and is always requested by my husband quite often, year round. It's super easy to make and will for sure impress your family, friends and dinner guests!
Ingredients:
1/4 Cup Chopped Onion1 Tbsp Margarine
2 Cups of Milk
8 oz Cream cheese, cubed
3/4 lb Velveeta cheese, cubed
10 oz chopped fine broccoli, cooked & drained (food processor or blender)
1/4 tsp nutmeg
dash of pepper
In a 2 qt sauce pan (5 qt if doubled), cook onion in margarine until tender. Be careful not to burn. With heat on medium, add milk, cubed cream cheese and stir until melted. Add remaining ingredients; heat thoroughly, stirring occasionally.
I like to grab a bag of frozen broccoli florets that you can steam in the bag, in the microwave. Then once that has cooked, add the broccoli to my food processor so that I get a very creamy and fine soup. If you like broccoli chunks in your soup, you can of course pulse the food processor or chop the broccoli yourself.
This has been one of my family's favorite soups for many many years! It's a very creamy and dreamy soup, perfect for lunch or dinner! It's a great soup to take to loved ones who may need a meal given to them (they just had a baby, had surgery, etc.).
