The Superbowl is quickly approaching, and if you're looking for game day foods to serve at your Superbowl party, your guests will love these homemade chicken meatballs! You can add any sauce you would like with them (prepared bbq sauce) or you can make the sauce we used. If you're not a fan of ketchup, you may want to use a different bbq sauce!
Recipe makes 17-18 golf sized meatballs
Ingredients:
{Meatballs}
1 lb ground chicken
1/2 cup chopped onion OR 2tsp dried onion seasoning
1/2 cup quick oatmeal oats
1/4 cup bread crumbs (I used homemade breadcrumbs with my food processor)
1 egg
1/2 cup of milk
1/2 tsp garlic powder
1/2 tsp salt
1 tsp Italian seasoning
{Sauce}
2/3 cup ketchup
1/2 cup brown sugar
2 Tbsp hot mustard (I used Hickory Farms Sweet Hot Mustard)
In a bowl, combine all meatball ingredients listed and mix well. If you think the mixture is not wet enough, add a splash more of milk; if it's too wet, add a little more bread crumbs. Make golf-sized meatballs and place them in your crock pot (sprayed with Pam). Next, in a small bowl, mix all of the sauce ingredients well (or you can use your favorite store-bought bbq). Spoon the sauce over the meatballs and cook on low heat for 4 hours, or until your meatballs are done. You can also bake these in the oven, I'd say at 350 degrees for 30 minutes or until they are done.
