Recipe | Creamy Cucumber and Tomato Salad


Do you have a bunch of tomatoes on your hands? This recipe is so simple and refreshing, I just love it! Especially this time of year when I get all my vegetables and fruits fresh from our local farms. 

What you need...


Ingredients:

1 Cucumber
1 Large Tomato
1/2 of Small Red Onion
1/2 TBL of Lemon Juice
1 tsp Garlic Powder
1 tsp Dill Weed
2 TBL Light Sour Cream
2 TBL Ranch Dressing
Salt & Pepper (to taste)
1/2 JalapeƱos (optional)

Directions: 

Cut up your cucumber in quarter's, Slice your red onion thinly in quarter's, and cut your tomato into bit size chunks (also add in small diced jalapeƱos if you wish). I do recommend scooping out the seeds and "guts" of your tomato, as this will make your salad have more liquid if you don't. 

Next, add your garlic powder, dill weed, salt and pepper. As well as your sour cream, lemon juice and Ranch dressing. Mix it all together and serve!
