Delicious Pumpkin Roll | Recipe


This pumpkin roll recipe has been in my family for a very long time. It's definitely the best around and is requested by many every Thanksgiving and Christmas family get together. It's super yummy and very easy to make! Enjoy!

Ingredients:
3 eggs
2/3 cup pumpkin
1 tsp baking soda
1 cup sugar
3/4 cup flour
2 tsp cinnamon

Homemade Peanut Free Soy Butter Cups Recipe


As you may know, my daughter has a severe peanut allergy. I wanted to find an easy and yummy recipe to make our own soy butter cups, but have always been intimated by the idea of making them on my own. I recently came across a recipe from The Best Blog Recipes and thought we'd give her recipe a try! We of course used WOWButter, as we are huge fans, and it is completely peanut free. I'm happy to say that our soy butter cups came out delicious and didn't last long; we'll be making more soon! You can of course use peanut butter for non-peanut allergies.

Ingredients:
30 1-inch Paper Candy Liners
1/3 Cup Wowbutter (or peanut butter for non-peanut allergies)
3/4 Cup Powdered Sugar
1/8 tsp Sea Salt
1 Tbl Butter
1 and 2/3 cup Hershey's milk chocolate chips
1 Tbl coconut oil (or vegetable shortening if you don't have coconut oil)



Directions:
Mix chocolate chips and coconut oil in a medium sized microwave safe bowl and microwave uncovered for 1 minute. STIR. If need be, microwave an additional 10- to 15-seconds (in intervals), stirring just until melted.

In a separate bowl combine WOWButter (or Peanut Butter), powdered sugar, butter and sea salt. Mix thoroughly until there are no lumps. Place paper candy liners on a baking tray. Spoon about 1/2- 1 teaspoon of melted chocolate into each paper cup-- make sure to cover the sides of the cup about half way up the paper liner! Roll Wowbutter/peanut butter into small balls. Flatten them a bit and then place them on top of the melted chocolate in your paper cups. Top each with an additional 1/2- 1 teaspoon of melted chocolate. Place your cups in the fridge and refrigerate for 20 minutes, or until they are firm. To store, keep them in a covered container in your refrigerator. They also freeze nicely as well!

DIY Sheep Costume Step by Step Guide

My daughter has her first ever play on Tuesday, and I am so excited for her but at the same time, I've been racking my non-crafty brain on how to create a sheep costume for her. The entire class has been asked to dress up as sheep for this years Christmas musical play, so after searching Google and Pinterest for ideas, I headed to my local Wal-Mart and purchased everything I would need to make my first-ever costume!


Supplies needed:
  • Glue gun
  • Glue sticks
  • Scissors
  • Cotton balls
  • Black felt or cloth for ears
  • Black sweats & matching top
  • White t-shirt
  • White headband
Step 1:
  • I started on the ears first-- I removed the bow and nose from the snowman, traced them over the black cloth (or felt), then cut out the ear shape. Once I had enough cloth pieces cut out (1 for the front and 1 for the back of each snowman), using the hot glue gun, I glued them on the front and back of the snowman. Super easy to do and now you have sheep ears!

Step 2:
  • Take your white t-shirt and cut the sleeves off, then using the hot glue gun again, I glued cotton balls on the front and back of the t-shirt, one by one. It is time consuming but the shirt turned out super cute once I was done! 

Step 3:
  • Once everything has cooled off and dried, it's time to get dressed! 


There ya have it! A super easy, affordable and adorable DIY sheep costume! I can't wait to see my daughter and all of her classmates in her first ever play wearing her new sheep costume!

Creamy Vegetable Medley #Recipe


This side dish is great for big family holiday meals; my family especially loves it at Thanksgiving and Christmas! It's so stinkin easy to make, very quick, easy on the budget and is definitely a crowd pleaser!

Ingredients:
16 oz frozen bag of broccoli/carrot/cauliflower medley
8 oz spreadable garden veggie cream cheese
1 can cream of mushroom soup
1 cup seasoned croutons

Directions:
Mix first three ingredients together in a 2 qt baking dish with 1/2 cup seasoned croutons. Tops with 1/2 cup croutons. Bake at 375 degrees, uncovered for 25 mins.

Perfect Apple Pie with a Buttery Crumb Topping #Recipe


It's that time of year where I feel like I am baking all the time, making pies, cookies, pumpkin rolls, and cakes left and right! I recently made my most requested pie for Thanksgiving, which happens to be apple crumb pie and I thought I'd share this family favorite recipe with my lovely readers!

Ingredients for dough:
1/2 Cup Flour
1/2 Cup Shortening
1/2 tsp Salt
1/4 Cup Ice Cold Water (or more)

Directions:
Mix flour, shortening and salt. Gradually add water- fold with hand no more than 8 times. Wrap dough ball in plastic, refrigerate for a 1/2 hour. Makes 1 bottom pie crust-- double for 2 bottoms. 

Ingredients for filling:
5-6 McIntosh apples
1/2 Cup Sugar
2 Tbl Flour
1 tsp Cinnamon
1/2 dash Salt & Nutmeg (very little)


Directions:
Peel apples, core them and slice them thinly. Mix all the filling ingredients with the apples. Roll out your refrigerated dough. Make sure you flour your work station (counter/table) and rolling pin. Place your dough in your pie baking glassware and trim ends. Place your apples in your pie shell.

Ingredients for crumbs:
1/2 Cup Sugar
3/4 Cup Flour
1/3 Cup Butter (stick-room temperature!)
**Makes enough for 2 pies

Directions:
Fork all of the crumb ingredients together and sprinkle on top of pie. Bake your pie at 350 degrees for 50 minutes. **I wrap the edges of my pie crust with tin foil and remove the last 5 minutes so it's golden brown and not too dark/crispy.


That's it! You will have a delicious and most favored homemade apple pie! Enjoy!

Halupkies {Stuffed Cabbage Rolls} | #Recipe


Have you ever heard of halupkies? I didn't grow up with this dish, but thankfully my mother-in-law introduced them to me! They are so yummy and one of my husband's favorite foods, and now one of mine as well! This meal is easy on the budget, will feed your whole family and they will be sure to love it! I think kids who are picky eaters will love it...and yes, even the cabbage too!

The following ingredients will make about 9 halupkies about the size of your fist. You can always double the batch and freeze them!

Ingredients:
Any ground meat- 1 pound (If doubling I recommend 1 pound of beef and 1 pound of turkey, mixed)
1 cup of uncooked rice
1 head of cabbage
Veggie Juice
Spices to taste: salt, pepper, paprika, thyme, onion powder & garlic

Directions: Mix your meat, rice, 1/4 cup veggie juice, spices and garlic in a bowl. Ball up meat mixture (the size of large meatballs), put in center of cabbage, roll up tightly and pile up in a large sauce pan- keep on low-medium. Pour the rest of the veggie juice all over the halupkies. Simmer in pan for about an hour keeping an eye on the bottom halupkies making sure they do not burn.

Apple Dumplings with a Sweet Brown Sugar Sauce


It's that time of year again where Fall foods are being made in our home. When I think about my favorite Fall dessert, it's a toss between apple dumplings and pumpkin roll. Today my daughter and I made apple dumplings, and since I love my readers so much I thought I'd share this awesome family recipe with you all! It's the best apple dumpling recipe ever, and it even has a special sauce that was my late grandma's recipe and it's super yummy!

First step is to make the sauce...

Ingredients:
1 cup brown sugar
1 /2 cup water
1/4 tsp cinnamon
(for later-- 2 Tbl butter)

Directions:
Put brown sugar, water and cinnamon in a sauce pan and bring to a boil. Turn down and simmer 5 minutes stirring occasionally. Remove and add 2 tablespoons of butter.


For the apple dumplings...

Ingredients: 
4 McIntosh apples
dash of cinnamon
dash of sugar

Dough:
1 1/2 cups flour
1/2 cup shortening
1/2 tsp salt
1/4 cup water

Directions:
Mix dough, then roll it out. Take a butter knife and evenly cut two lines (an X) into the dough to make 4 sections. Peel all 4 apples and de-core them (I cut them in half then de-core them). Place one apple in the middle of each dough section. Add a dash of sugar and cinnamon on each apple. Take the sides of one section and roll up the dough onto the apple-- do this for all four apples. Tightly close the dough making sure no apple is exposed and that there are no holes. Place all 4 apple dumplings in a baking pan, then add your brown sugar sauce, pouring them on top of apples. Bake at 350 degrees for 30-45 minutes until golden brown.

Since I was a little kid I have been enjoying this recipe of apple dumplings and I believe you will love it too! I like to eat mine in a bowl (warm) with some cold milk splashed on it.

Homemade Chicken & Dumplings #Recipe


I just love chicken & dumplings! The key to a good chicken & dumpling meal is the creamy mixture and dumplings. I got this awesome recipe from a family friend of my mom's and it is the best recipe I have found! Not the healthiest....this meal is about comfort and its yummy goodness! It's an easy meal to make and feeds a family of 4. If you have more than 4 members in your family I would add more chicken and an extra 1/2 of the dumpling mix--make sure you're using a big cooking pan!

Ingredients:
4 Tbsp. Shortening
4 Tbsp. Flour
1 Cup Chicken Broth
2 Cups Diced Cooked Chicken
1 Cup Milk
1/2 tsp Salt
1/4 tsp Garlic Powder
2 tsp. Chopped Onions

Directions:
Melt shortening in a large cooking pan on stove: blend in flour, garlic powder and salt. Add milk and chicken stock. Cook over low heat until smooth and thick. Stir in onions and chicken; blend well. *An easy way to cook chicken is to cube it raw, then add your chicken to boiling water. Boil until no longer pink.

Dumplings:
1 Cup Flour
1/4 tsp. Salt
1/2 Cup Milk
1 1/2 tsp Baking Powder
2 Tbsp. Melted Shortening

Directions: 
Mix ingredients with shortening and milk; blend to moisten. Drop by teaspoon onto chicken; cover. Cook 15-20 minutes over low-medium heat.


I like to always serve this meal with a side of veggies, any vegetable really! You're gonna love the fluffiness of the dumplings, they're not doughy at all! Just and salt and pepper to taste! Enjoy!

Easy Hearty Casserole #Recipe


Do you have any childhood favorite meals? One of my all time favorite meals I remember as a child is Hearty Casserole. I always asked for it all year round, even though my mom only really wanted to make it in the Fall and Winer since it has to cook in the oven for an hour. I recently made this meal and since I haven't had it in years, eating it was all the more delicious! Some meals, flavors and scents just remind you of a lot of things and this meal in particular reminds of me of all of my family eating at the dinner table together, talking about our day at school.

Homemade Organic Tomato Soup | Easy Recipe


Growing up, my mom would make homemade tomato soup and I do not think I began to appreciate it until I was an older teenager. I personally loved Campbell's tomato soup and always wanted it with grilled cheese. As I have gotten older and have really explored trying out making new dishes and soups, I began making my own tomato soup. The following recipe is so simple and easy to make, trust me! It is loaded with flavor and in my opinion better than Campbell's tomato soup!

Exasperated Expeditions {Guest Post}

I'm excited to have my Mother-in-Law guest post today! Hello there, and thank you for allowing me the wondrous opportunity to be a guest on Housewife on a Mission’s blog. I am so honored to be able to reach out to you through the wonders of technology that was pretty much unheard of 25 years ago, when I was eh-hmm, a young mom myself. When Megan first asked me to be her guest blogger I thought to myself what in the world could I possibly say to these young savvy lady readers whether they be wives or moms that they haven’t already heard a zillion times ?

"hang in there" "love your life now" or how about the poem about the dusting that can wait, cuz I'm rocking my baby and babies don't keep?

No, I want to encourage you to enjoy this season of your life. I want to remind you about self-care. Before there were babies, toddlers and young kids, what did you do? How much time did you spend quietly reading your Bible, and praying? I have met women that do not want to make time to lay aside their ambitions and give sacrificial love to have a child at all. They do not know what they are missing. I have such a gnawing hunger to see young mothers enjoy staying home and raising children. Not babysitting, but raising them. Teaching them daily lessons, chores, bed making, bath tub cleaning, and laundry sorting. Cuddle time to read and explore new stories. Gardening flowers and food.

 Unless you have a marriage where you are both surrendered to following a Christ-like life just staying married will be a challenge. Throw a couple of little miracles in and you will not only be challenged to stay married, but challenged to stay sane as well. When you have a child, and you choose to raise that child or children in the model of a biblical home, you have such a wonderful opportunity to be the example of happiness, unity and love. Moms teaching little girls about how to fold clothes, or braid their hair, and dads showing their sons how to separate the recycling, or shovel the walkway of snow. These are simple, but perfect examples to set of how to know their place in the world. Securely.

The young learn by the example of the older.
 As a young mother and wife I did not have a biblically sound marriage. It rarely felt like a privilege and honor to be a mom. More of a duty. I did not have any type of "teacher" in the area of becoming a wife or mother. Don't misunderstand, I loved my child. I was passionate about teaching him things that I was doing, and tried to remain patient as he pulled cookie dough of his baby fat fingers instead of rolling the dough to bake an actual cookie.
Yes, I was able to be a stay-at-home mom for the better part of my young motherhood. I decided to make sure I instilled prayer time, and scripture memorization along with simple Bible stories that are all but forgotten today. YES! There were numerous days I just wanted to talk to another adult, or go out with a friend and not worry about packing sippy cups, diapers, or a change of clothing. I was often the exasperated mommy. Full-time home maker is so under rated today, and yet it is such a very important career, when done biblically.

 Quiet time was my favorite time of the day.
Nap time was a great time and I stretched those out for as many years as possible. Even when my son no longer slept, he could choose as many books as he wanted, and climb on his bed to "read" them. The rule was he must stay on his bed and be quiet until the timer went off. Instilling quiet time in him recharged us both.
45 minutes of peace, quiet and “me” time. It wasn't always at the same time of day, it just happened every day possible.
In every place we lived I had a spot in the closet where I could disappear. Long ago, I had taken the verse about going into your closet (or room) and closing the door to pray literally. Often we lived in a one bedroom place, so I would go into the next best place to be alone…..you guessed it.The bathroom.
You are smiling or nodding because you know there are times you stay in there and just close your eyes! Flush the toilet, or turn the water on pretending you are busy. Of course you do, you are a mom!! You get exasperated! Kids are sponges soaking up everything you do, and when you realize that you are dried up and running on empty, you need to take a break.

It has been just a few years since I was a young mother. I had distractions, meals to make, dust bunnies to chase, cards to send. Today, you have emails to send, texts to reply too, Facebook to peer at, Instagram photos to post, and many other assorted technological ways to be busier than ever. But, if I can just challenge you, as one wife and mother to another, please set an alarm for quiet time. Every day make the time to just shut out everything except a moment with your Creator, and Father God. See, I am challenged when I read Paul’s letter to Titus where he advises him to tell the "older women to be teachers to the young women." "Teaching you to love your husbands, and to love your children". "Teaching you to be discreet & chaste." Words like that do not set well with modern women. I know that. Biblically modeled families are not encouraged today. You want your equality and independence. You deserve to be a productive citizen with a mortgage & "real" career. Check yourself if you feel a sting about being submissive and obedient to your godly husband.

If your kids are a burden and make you scream and show your ugliness, maybe you need to set a timer. Perhaps you have friends or relatives that think you are wasting time staying at home, and not "out there" working. I am sure you have heard that it is nearly impossible to have a one income, one car, one cell phone life in the twenty first century. I want to" teach" you, that this time is precious. Your children may be entertained at a daycare or with sports, dance and music classes, but when they are grown they may become insecure & needy. Not knowing how to relax, and be alone they will find amusement some where outside of the home. Instead of feeling intimidated or rushed when your small child wants to set the table, or help wash dinner plates, encourage her or him to help you.
YOU are the model that they will eventually become. How scary is that sentence?

Perhaps you can’t manage a 45 minute afternoon break, because you have more than one child, and their schedules don’t allow for that, but could you possibly find twice a day for even 15 minutes of meditation on a verse of the day, or a devotion? Reign your thoughts back to where nothing else matters except you. Set the smart phone down, and just hear yourself breathe. You need to recharge yourself mentally, physically and spiritually. Find a godly "teacher" or mentor that is older and can reassure you that what you are doing is worth so much more than it often feels or appears. Dig into Gods Word and see what He says about parenting, marriage and home making.
Losing your temper, yelling "NO" instead of instilling a choice of calmness, and a "Let's do this instead" attitude, may be a sign that a timer needs to be set. You could be exasperated.

More than once I have told women that becoming a wife is a tough, selfless job, and it most certainly is. Then I follow up when they announce that they are pregnant by telling them that parenting is the toughest job they will ever love. One day, you will look back and see all the expeditions you were on; the vacations, the trips to the park, story time, Sunday School attendance, crying while you combed hair and clipped barrettes, refolded the towels from the hands that wanted to help, and swept up the flour that is now all over the just mopped floor and not in the cookie dough, and you can smile. You were exasperated in your twenties and early thirties. You missed a lot of worldly fun because you wanted to finish a bedtime story, and get splashed with bath water. Going on a date with your husband, lover and best friend was the highlight of your life on the rare occasion it happened. You passed up the big corporate career, and left the life of  building a nest egg for the bigger house and better car. But you instilled peace and a contented spirit into another soul. Your expeditions are solid foundations that were laid for that miracle that is now grown and off to repeat history on their own exasperated expedition.
