Tasty Thursdays: Baked Oatmeal


If you're looking for a delicious baked oatmeal that is easy to make, you've come to the right spot! It's a huge hit in our house and doesn't last long. Plus, it makes the whole house smell heavenly! With the recipe below, take note that you can use applesauce instead of butter and cut down on the brown sugar if you want to a 1/2 cup-- if you do that, check it after 30 minutes to see if it's done or needs more time.

Serves 6-8 (depending on serving size)

Ingredients:
3 cups rolled oats
1 cup brown sugar
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
1 cup milk
2 eggs
1/2 cup melted butter
2 teaspoons vanilla extract
3/4 cup dried cranberries or 1-2 apples (peeled, diced bite size)

Directions:
1. Preheat oven to 350 degrees

2. In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, and vanilla extract. Stir in dried cranberries or diced apple pieces. Spread into a medium sized glass baking dish or a 9x13 inch baking dish (will be shorter in height).

3. Bake in preheated oven for 40 minutes.

I love to serve right away and splash some milk over top! Refrigerate left overs. Enjoy!
